A few of my favorites from no particular genre:
As I lay dying – Faulkner,
The Martian and/or Project Hail Mary – weir,
Neil gaiman,
Stephen king,
Outer dark – McCarthy,
The Hobbit,
Big fish – Wallace,
All my friends are superheroes – Kaufman,
Greek epics,
Sharp objects – Flynn,
Bit of a random assortment, but these are some I enjoyed.
In contrast, a few popular books I didn’t care for
Dark matter – crouch,
Where the crawdads sing,
Dark places – Flynn,
Annihilation – Vandermeer.

Re Faulkner and McCarthy choices, if you haven’t read all of McCarthy I think you will like Child of God, The Passenger, Blood Meridian. Also Wise Blood by Flannery O’Connor. Re your Andy Weir picks, try Daniel Suarez, in particular Delta-V and its sequel Critical Mass.
