Something like Evangelion in which a greedy, power-hungry, highly-driven, immoral individual/group uses technological advances to harness the power of god. Humans become so powerful / learn so much about physics and nature that they can rival god himself.

Hmm, would you accept a book where it’s magic and an understanding of the gods, not technology, that allows it? If so, “The Raven Tower” by Ann Leckie is a fantasy novel set in a world where gods are basically national resources.
It’s a spoiler, so I’ll block out the title and try to be vague, but >!NK Jemisin’s “Broken Earth” trilogy!< eventually includes a civilization that reaches godlike levels of technology, but it’s kind of an atheistic universe.
